1/3 c. Quinoa, rinsed
2/3 c. Water or Chicken stock
1 Tbs. Oil
1 Onion, finely chopped
1 Carrot, grated
1 Bell Pepper, finely chopped
1 tsp., Garlic Powder
2 lbs. Ground Turkey
2 Tbs. Tomato Paste
2 Tbs. + 2 Tbs. Worcestershire Sauce (separated)
2 eggs
2 Tbs. Brown Sugar
Boil quinoa in water or chicken stock; reduce heat, cover & simmer until quinoa is tender and water has been absorbed. About 15 to 20 mins.
Heat oven to 350◦ Heat oil in skillet over med. heat; stir in carrot, onion & pepper; sauté 5 mins.; remove from heat to cool. In a large bowl, stir turkey, veggies, quinoa, tomato paste, 2 Tbs. Worcestershire, eggs, garlic powder, salt & pepper to taste. The mixture will be very moist. Shape into a loaf. Combine 2 Tbs. Worcestershire & brown sugar in a bowl. Pat paste on top of meatloaf. Bake about 50 minutes. Let cool for 10 mins. before serving.
