2 Tbs. Butter
1 tsp. Olive Oil (or other cooking oil, especially good with bacon grease)
2 c. Rice, uncooked
1 Onion (small to medium)
4 c. Chicken Stock/Broth
28 oz. can of Diced Tomatoes (or 2lbs. Fresh tomatoes, diced)

Heat large pot over medium heat. Add butter and olive oil.
Add rice and stir to coat. Stirring constantly, toast the rice for 2 minutes. Add onion and sauté for 1-2 minutes until it begins to soften.
Add chicken stock, and salt and pepper to taste. Stir to combine. Cover and bring to a boil then reduce heat to lowest setting. Simmer for 10 minutes.
Add tomatoes and stir. Cover and simmer for another 10-15 min. Let stand for 10 mins. and serve. SEE OUR WEBSITE FOR MAC & CHEESE
