1 can Salmon (drain & remove bones)
1 tube of Crackers, divided & crushed
1 egg, beaten
2 Tbs. Mayonnaise
Salt, pepper & garlic powder to taste
1/4 c. cooking oil
In large bowl, mix salmon, 1/3 tube of crushed crackers, egg, mayonnaise and seasonings.
Spread out the rest of the cracker crumbs on a plate.
Gently scoop up a handful of the salmon mixture and form into a thin patty in the palm of your hand. Dip each side into the cracker crumbs to coat.
Heat oil in skillet . Gently place each patty into the hot oil. Turn with a spatula (away from you) when golden brown . Continue cooking until both sides are brown. Pour Mac & Cheese over the patties and serve.
