1 med. Onion, chopped fine

1 Tbs, Oil

2 c. Broth (or use Bouillon to make 2 c. broth)

3 large Potatoes, peeled & cubed

1 can Corn

1 c. Milk, divided into two 1/2 cups

1/3 c. Flour

 

Sauté onion in the oil using large pot over medium heat until tender.

Add broth and potatoes; Bring to a boil; cover, reduce heat and simmer for 10 to15 minutes or until potatoes are tender.

Stir in corn, 1/2 c. milk (add salt and pepper if desired.)

In measuring cup or small bowl, whisk flour and remaining milk until smooth; Stir into soup; return to a boil; Cook and stir for 2 to 3 minutes or until thickened.
