1 lb. Pork Sausage

2 Tbs. Oil

1 c. uncooked Rice

1 can Diced Tomatoes

1 c. Water

1/2 c. Onion, chopped (or 2 Tbs. Minced Dried

Onion)

1 Tbs. Garlic Powder

1 med. Zucchini, sliced (optional)

Pour oil in bottom of skillet on medium heat and swirl until bottom of pan is coated.

Add pork sausage, garlic powder, and onion (if fresh); Cook until brown while stirring with spatula to break up meat.

Turn heat to medium low; add zucchini; Sauté for 2 minutes.

Stir in tomatoes, rice and water (and onion if dried); Mix well.

Turn heat to low and cover with lid; Cook for 20 minutes or until rice is tender.
