1 lb. Ground Beef or Ground Chicken
1 Onion, diced
1 c. Carrots, diced or sliced thin (or 1 can)
Garlic (4 cloves or 1 tsp. dried)
1 Tbs. Italian Seasoning (or 1 tsp. each, Basil & Oregano)
Salt & Pepper to taste
1 can Tomato Juice
1 can Diced Tomatoes
5 c. Chicken Broth
2 cans Kidney, White, Navy or Pinto Beans
1 c. Elbow Noodles
In large pot, cooked ground meat, onion and carrots (if raw) stirring constantly until meat is broken up and no longer pink.
Add remaining ingredients and bring to a boil.
Reduce heat and simmer on low for 12 to 15 minutes or until pasta is cooked through.
Optional Toppings: Cooked Bacon, crumbled; Red Pepper Flakes; Parmesan Cheese.
