1 Tbs. Butter
Salt & Pepper to taste
2 8-inch Flour Tortillas
Salsa, Guacamole, Cilantro & Sour Cream (optional)
Melt butter in frying pan on low.
Scramble eggs in cup or bowl. Add salt & pepper if desired. Pour into frying pan.
When eggs are almost solid, sprinkle with shredded cheese and put a tortilla on top.
Allow to cook until the egg and cheese mixture sticks to the tortilla and can be flipped without breaking apart.
Flip and add another sprinkle of cheese and another tortilla. When bottom tortilla is slightly crisp but still pliable, flip again and let the second tortilla become slightly crisp as well.
Remove from pan and spread with salsa and other optional toppings. Cut into four pieces and serve.
