2 pkg. Cornbread Stuffing Mix +
2 Eggs & 2/3 c. Milk
1 1/2 lbs. Ground Beef
1 can Diced Tomatoes & Chilis Ro-Tel)
1 can Corn, drained
1 can Pinto Beans (or Ranch-Style Beans)
1 c. Shredded Cheese
1 pkg. Taco Seasoning
Preheat oven to 425 degrees. Mix cornbread according to directions. Brown ground beef, drain. Add taco seasoning, undrained can of tomatoes & chilis,
undrained can of pinto beans and drained can of corn. Simmer for about 5 mins. Stir into cornbread mix and add cheese. Stir completely. Pour into a greased 13”x9” baking dish. Bake 25 to 35 mins. Optional—serve with more cheese, salsa & sour cream.
