2 1/2 to 3 c. fresh Vegetables, sliced thin
3/4 c. Flour
3/4 c. Water
1/2 tsp. Salt
Combine vegetables in bowl. Add flour, salt and water. Mix well.
Heat a large non-stick skillet over medium heat.
Add vegetable batter and spread evenly.
Turn heat to medium. Gently press flat with a wooden spoon or spatula.
Cook 4-5 min. until bottom is a crunchy light golden brown. Flip to other side.
Cook 3-4 min. until second side it light golden brown.
Turn heat to low and continue cooking for 2 min., flipping frequently.
Serve with soy sauce or any dipping sauce.*
*Sweet & Creamy Asian-style Dip (1 c. Mayonnaise; 1 Tbs. Honey; 1 Tbs. Soy Sauce; 1 tsp. ground Ginger; 1 tsp. chopped or powdered Garlic)
Dipping Sauce (3/4 c. Orange marmalade; 3/4 c. Mayonnaise; 1 Tbs. Lime Juice)
*Cheese Dip (1 c. shredded Cheese; 1/2 c.
Mayonnaise; 1/2 c. Sour Cream. Microwave on high for 30 seconds. Stir until smooth.)
