Shepherd’s Pie

7 Potatoes, peeled and cubed (or 2 pkgs. Instant Potatoes)
1 lb. Ground Beef or Boston Burger
1 c. Water
2 cubes Beef Boullion
1 cube Chicken Boullion
1 ½ c. mixed Frozen Vegetables
Seasonings such as salt & pepper; steak seasoning; onion flakes

  1. Boil, drain and mash potatoes or follow directions on package of instant potatoes
  2. Preheat oven to 350 degrees
  3. In cast iron skillet (or any skillet) cook meat until browned and drain grease
  4. Pour water, boullion, seasonings and frozen veggies into skillet.
  5. Cook until most of the liquid has evaporated
  6. Cover top of the mixture with the mashed potatoes in the same skillet if you used cast iron (in a casserole dish if you didn’t use a skillet that can go into the oven)
  7. Bake in preheated oven until top begins to brown

Taco Soup

1 lb. Ground Beef or Boston Burger
1 medium Onion, diced
1 pkg. Ranch Dressing Mix
1 pkg. Taco Seasoning
1 lg. can of Tomato Juice
1 can Kidney Beans or Pinto Beans
1 can Black Beans
1 can Corn
1 – 2 cans diced Tomatoes or Ro-Tel

  1. Brown hamburger with onions; drain grease
  2. Combine all ingredients with the beef and onion mixture in a large pot
  3. Simmer 45 minutes

Chicken Pot Pie

1 can Cream of Chicken Soup
1/2 c. Milk
2 ¼ c. Frozen Mixed Vegetables
1 c. Cooked Chicken or Turkey
1 c. Shredded Cheese OR 1 Tablespoon of Flour to thicken if you aren’t adding Cheese
1 can Biscuits

  1. Preheat oven to temperature listed on biscuit package
  2. Stir the soup, milk, vegetables and chicken (and cheese OR flour) together and pour into a 9” cast iron skillet or pie pan.
  3. Arrange biscuits to cover top
  4. Bake until biscuits are browned

Aunt June’s Meatloaf

2 lbs. Ground Beef or Boston Burger
1 box/bag of dried Stuffing Mix
1 c. water or Broth
½ c. BBQ sauce
2 Eggs
1 medium Onion, diced

  1. Preheat oven to 375 degrees
  2. Mix meat, stuffing mix, water or broth, HALF of BBQ sauce, eggs and onion together
  3. Form into a loaf
  4. Place into a pan, casserole dish or cast iron skillet
  5. Pour the remaining BBQ sauce over the top of the meatloaf
  6. Bake for 1 hour or until center reaches 165 degrees
