I tbs. oil
1/2 c. Green Pepper (chopped) [subs. any color pepper]
1/2 c. Onion (chopped)
1 lb. Ground Beef or Boston Burger
1/3 c. Salsa*
1 can Diced Tomatoes*
(*Or subs. 1 can Ro‐Tel for these two items)  1 can Black Beans or Pinto Beans
1 can Corn
1 c. Rice
2 Tbs. Taco Seasoning
2 c. Chicken Broth
In a large pot with a 􀀁ght lid, heat oil; Sauté peppers & onions un􀀁l tender; Add beef; Cook un􀀁l browned; Drain .
S􀀁r in remaining items; Cover with lid; Bring to a boil; Reduce heat to low and simmer 15 to 20 minutes (un􀀁l rice is tender.)
Serve over chopped le􀀃uce with your favorite Tex‐Mex toppings or scoop up with tor􀀁lla chips.
